Mini Blueberry muffin with Lemon Zest


The muffin is good by itself. You can substitute the blueberry with dried cranberry and the lemon zest with orange zest.


Ingredients:

1/2 cup sugar
1 tbsp grated lemon zest
2 1/2 cup all purpose flour
1 tbsp baking powder
2 lightly beaten eggs
1 cup milk
1 stick of butter (melted)
1 tbsp vanilla extract
1 cup fresh blueberry

Direction:
1. Preheat oven to 400 degree
2. In medium bowl, stir the sugar, lemon zest, flour& baking powder.
3. In a large bowl, beat the eggs, butter, milk and vanilla with electric mixer until smooth, about 1 minute.
4. Add the dry ingredients, mix well. Add blueberries, fold until combined. Spoon the batter into greased mini muffin pan.
5. Sprinkle sugar on top of the muffin
6. Bake for 12 minutes.
