Ingredients:
4 sweet potatoes (cubed 1 inch thick)
1/4 cup grade b maple syrup
1/4 cup olive oil
2 teaspoon salt
1 teaspoon black pepper
4 shallot (sliced thin)
2 tablespoon balsamic vinegar
Direction:
Preheat oven to 400F
In a large baking sheet, toss sweet potatoes, 2 tablespoon maple syrup, 2 tablespoon olive oil, 2 teaspoon salt, 1 teaspoon pepper. Mix well. Roast until caramelized, about 20-30 minutes. Check them every 15 minutes.
Meanwhile, in a large skillet over medium-low heat, add the remaining olive oil and shallot. Saute until they start caramelize, about 5 minutes. Add remaining maple syrup and balsamic vinegar. Season with salt and pepper to taste. Lower the heat to medium, and cook until golden brown and caramelized, about 5 minutes. Add water, 1 teaspoon at the time, if the pan becomes dry.
Add the roasted sweet potato to the caramelized shallots, transfer to warm serving dish.
