Sausage and Broccoli Rabe Fettuccine

From America's test kitchen..

3 table spoon olive oil
1 pound sweet italian sausage (casings removed)
5 garlic cloves, sliced thin
1/2 teaspoon red pepper flakes
Salt and pepper
1 pound fettuccine
1 large bunch broccoli rabe, trimmed and cut into 1 inch pieces
1/2 cup grated parmesan cheese

Bring 4 quarts water to boil in a large pot. Meanwhile, heat 1 tablespoon of oil in a large skillet over medium high heat until just smoking. Cook sausage unit browned, breaking it into small pieces, about 8 minutes. Add garlic and pepper flakes, and cook until fragrant, about 30 seconds. Remove from heat, cover, and keep warm.

Add 1 tablespoon salt and fettuccine to boiling water and cook until nearly al dente. Add broccoli rabe and cook until tender, 2-3 minutes. Reserve 1/2 cup of cooking water, drain pasta and broccoli rabe, return to pot. Add cheese, sausage mixture, and remaining oil, and toss to combine, adding reserved pasta water as needed. Season with salt and pepper. Serve.
