Pasta Caprese

Ingredients:

  • Short cut pasta
  • olive oil
  • 1 Small Garlic Clove (minced)
  • 1 Small Shallot (minced)Salt and Pepper
  • Tomatoes (cut to small cubes) - seasoned with a little sugar and lemon juice)
  • Fresh Mozarella (cut in cubes)
  • Fresh basil Leaves (chopped)
  • 1 teaspoon of sugar
Direction:
  1. Whisk Oil, garlic, shallot, lemon juice, salt and pepper together in a large bowl. Add tomatoes and gently toss to combine. Let the mixture marinate for about 10-12 minutes.
  2. While it's marinating, place the mozzarella in the freezer (about 10 minutes)
  3. Boil some water, add salt. Cook pasta until aldente.
  4. Add pasta and mozzarella to the tomato mixture, gentle toss them to combine. Let the mixture stand 5 minutes.
  5. Taste. Add salt/ pepper if needed.
