Pan Seared Shrimp with Chipotle Lime Glaze

I saw this recipe at America's Test Kitchen Magazine. They are to die for......

Ingredients:
  • 2 tablespoon vegetable oil
  • 1 1/2 pound extra large shrimp (21-25 per pound), peeled and deveined.
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon of sugar
For the glaze (mix all ingredients together in separate bowl)
  • 1 Chipotle Chile in adobo (minced)
  • 2 teaspoon of adobo sauce
  • 4 teaspoon of brown sugar
  • 2 tablespoon of lime juice
  • 2 table spoon of chopped fresh cilantro

Direction:
  1. Heat oil in a skillet
  2. Meanwhile toss shrimp, salt, pepper, and sugar in medium bowl.
  3. Add shrimp to skillet, cook until spotty brown and edges turn pink (about 1 minute)
  4. Add the glazed to the shrimp, mix well.
  5. Let them hang out for 1 minute
  6. Serve immediately.
