Red skin potato salad with dijon dressing

Ingredients:
Red Skin potato
Olive oil
Garlic
Fresh herb (any available)
Lemon juice
Honey
Salt and pepper
Chilli flakes

Direction:
Cut potato to medium dice
Boil them until tender (about 15 mnts)
In a grinder, grind garlic, herb, lemon juice, salt and pepper, honey, chilli flakes, and olive oil. Taste.
Mix with potatoes.
Let the potatoes rest in the refrigerator for 30 mnts.
