Chipotle Lime Shrimp Cakes

Ingredients:
16 large shrimp, cleaned, tail off.
2 cup panko
1 chopped scallion
1 clove garlic
1 cup chopped cilantro
1 tablespoon of lime juice
zest of 1 lime
salt and pepper
1 chipotle adobo (diced)
oil for frying
1 tablespoon of dijon mustard
1egg

honey mustard for dipping


Direction:
In a food processor, put together shrimp, garlic, scallion, cilantro, egg, 1 cup of panko, lime zest, lime juice, salt and pepper, chipotle adobo, and dijon mustard. Pulse a few time until all ingredient blend well, but not fine.

Create small patties, roll with panko. Let them rest in the refrigerator for 10 minutes. Pan fried them until golden.

Serve with honey mustard dipping sauce.
