Delicious... so moist. The toasted nuts really add flavor.
Ingredients
1 cup all-purpose flour
1 cup whole wheat flour
1/2 teaspoon baking soda
1/2 cup white sugar
1/2 cup brown sugar
1 egg
5 tablespoons milk
1 teaspoon baking powder
3/4 teaspoon salt
1/2 cup butter (room temperature)
1 cup mashed bananas (3 large bananas)
1/2 cup chopped toasted walnuts (optional)
1 teaspoon cinnamon
1/2 teaspoon nutmeg
Directions
Sift together flour, baking soda, baking powder, and salt, cinnamon and nutmeg.
In a large bowl, cream sugar and butter or margarine. Beat the egg slightly with milk, and mix into the creamed mixture with the bananas. Mix in sifted ingredients until just combined. Stir in nuts. Spread batter into one greased and floured 9x5 inch loaf pan. Sprinkle top with more nuts.
Bake at 350 degrees F (175 degrees C) until top is brown and cracks along the top.(50 minutes). Turn off the oven, let it stand inside the oven for 15 minutes.
