Pasta with mushroom and creamy balsamic


Ingredients:
2 cups Short cut pasta (such and penne)
A pint of sliced mushroom
A table spoon of fresh thyme (chopped)
3 cloves of garlic (chopped)
2 table spoons of chopped basil (fresh)
Red pepper flakes
3 tablespoon of balsamic vinegar
1/2 cup heavy cream or half and half
1/4 cup grated parmesan cheese

1. Cooked pasta according to direction in a salted water. Put aside half a cup of pasta water at the end. Drained pasta.

2. In the meantime, heat 2 tablespoon olive oil. Cook the mushroom (5-6 minutes) until brown. Put in the garlic, stir for 30 seconds. Add red pepper flakes, thyme, and balsamic vinegar. Stir for 15 seconds. Add cream and pasta water, stir, add salt and pepper. Let it simmer for 3 minutes or until thick.

3. Add the pasta into the pan. Stir. Add basil and parmesan.

4. Serve with a side salad.

Bacon fried rice


1 1/2 cup old rice
3 slices of bacon, sliced.
1egg, whisked
1 shallot (sliced thin)
1 teaspoon minced ginger
4 cloves garlic (chopped thin)
1 tablespoon sweet soy sauce
1 tablespoon rice vinegar
1 teaspoon chicken bouillon
1 cup green vegetable
1 teaspoon shiracha
Sesame oil


1. Put a little oil on a wok. Make an omelette with the egg. Put aside. Julianne the egg.

2. Put the bacon in the work. Cook until almost crispy. Put in the shallot. Stir and  Cook for 3 mnts. Put in the ginger. Stir and cook for 30 seconds. Put in the garlic, cook for another 30 seconds. Add a little vegetable oil if it's too dry. 

3. Add rice and vegetable to the wok. Put in sweet soy sauce, rice vinegar, bouillon, white pepper. Stir. Add eggs, shiracha, and sesame oil. Taste and adjust.

4. Serve.




Lemon pasta with chicken


Protein: 
Chicken cubes ( seasoned with salt and pepper) from 1 chicken breast

Spaghetti or linguini (3/4 of a box)
Lemon (1)
Parsley (2 tbsp)
2 tablespoon of butter
4 cloves of garlic (chopped)
Red pepper flakes
Salt and pepper
Parmesan cheese

Cook the pasta in salt water according to direction. Reserve 1/2 cup pasta water, drain the pasta.

Heat 2 table spoon of olive oil on a pan. Cook the chicken until brown. Set aside chicken.

Heat 2 tablespoon of olive oil and butter on the pan. Cook the garlic for 30 seconds. Add red pepper flakes. Zest lemon, add to the pan with all the juice and reserve pasta water. Boil and reduce until half the liquid is gone. Add salt and pepper.

Add the pasta to the pan, and the chicken, and parsley. Toss and serve with parmesan cheese.



Millie pasta



Short cut pasta
Sliced carrots 1 cup
1/4 diced red onion
3 tablespoon sliced basil
3/4 cup halved cherry tomatoes
1/4 cup grated parmesan
Olive oil
Balsamic vinegar
Agave
1teaspoon mustard
Red pepper flakes
4 cloves garlic
1/2 cup cubes cheese

 
Season carrot with salt and pepper and olive oil. Roast for 30 mnts in a 400 F oven. Wrap garlic in a foil, and roast them for 20 mnts.

Cook pasta with salted water according to direction.

In a big bowl, add olive oil, balsamic vinegar, salt and peper, mustard, agave, red pepper flakes, whisk and taste. Adjust accordingly.

Add cooked pasta, onion, and tomatoes. Mix.  Add mashed roasted garlic. Once a little cool, add parmesan, basil, mix. Add cube cheese. Mix. 
Add roasted carrot.


Serve.

Char siu

4 pounds boneless pork country style rib
1/2 cup sugar
1/2 cup soy sauce
6 tablespoons hoisin sauce
1/4 cup dry sherry
1/4 teaspoon white pepper
1 teaspoon five spice powder
1 tablespoon sesame oil
2 tablespoon grated fresh ginger
2 minced garlic cloves
1/4 cup ketchup
1/3  cup honey

Prick pork 10-12 times. Place pork in a big ziplock bag. Combine sugar, soy, housin, sherry, pepper, five spice powder, sesame oil, ginger and garlic. Reserve 1/2 cup of the marinade. Pour the remaining in the zip lock bag. Let it sit in the refrigerator at least 30 mnts to 4 hrs. 
While meat marinates, add honey and ketchup to the reserved marinade in a small saucepan. Cook over medium heat for 4-6 mnts until syrupy. 
Heat oven to 300 degrees. Lined rimmed baling pan with foil and set wire rack in the pan. Soray foil and wire rack with cooking pan. Remove pork from marinates, and place them on the rack. Pour 1/4 water into the pan, and cover them with foil, crimping the edges tightly to seal. Bake for 20 mnts, then take out the foil. Bake for another 45 minutes. 

Turn on the broiler, broil the pork for 7 mnts. Remove pan from broiler, brush pork with half the glaze. Broil until deep mahogany color 3-5 mnts. Flip the meat, brush the remaining glaze. Broil for another 4 mnts. Cool for 10 mnts, cut and serve.

Kwetiau Goreng

Bahan dan Bumbu :
  • 100 gram daging ayam
  • 1 butir telur, kocok
  • 2 buah baso sapi, potong-potong
  • 1 buah kekian, potong-potong
  • 300 gram kwetiaw
  • 50 gram taoge
  • 6 butir bawang merah, iris tipis
  • 3 siung bawang putih, cincang halus
  • garam sesuai selera
  • ½ sdt merica
  • 1 sdm gula
  • 2 sdm kecap manis
  • 1 sdm saos tiram
  • 1 sdm minyak wijen
  • irisan daun bawang
  • minyak untuk menumis
  • air secukupnya
CARA MEMBUAT KWETIAU GORENG :
  1. Tumis bawang putih dan bawang merah hingga harum lalu masukkan daging ayam, masak hingga matang kemudian masukkan telur, aduk sebentar lalu masukkan baso sapi, kekian, aduk sebentar. Tambahkan saos tiram, kecap, garam, gula dan merica. Aduk sampai rata dan tuang sedikit air putih.
  2. Masukan kwetiaw dan taoge, aduk hingga matang. Masukkan irisan daun bawang, aduk. Masukkan minyak wijen, aduk sebentar. Angkat dan sajikan dengan taburan bawang goreng.

Telur belado

4 boiled eggs
2 paprika
1 jalapeño
1 shallot
2 garlic cloves
lime zest
lime juice
chicken boullion
sugar
salt
lemongrass
1 tomato- cut

Blend the paprika, jalapeño, shallot, garlic in a food processor until it forms a paste. Pour 2 tsp of vegetable oil into the pan. Once hot, fry the boiled eggs for 1 minute.
Mix in the chili paste, cook until fragrant. Add lime zest, lime juice, sugar, salt, lemon grass, and tomatoes. Keep stirring until the sauce has thicken. Serve hot.

Ayam goreng bumbu kuning

Bahan dan bumbu utama :
  • 1 kg ayam (Kampung), dipotong-potong dan cuci bersih
  • 2 lembar daun salam
  • 350 ml air
  • Secukupnya Minyak Goreng 
Bumbu ayam goreng dihaluskan :

8 butir bawang merah
4 butir bawang putih
5 butir kemiri
3 cm kunyit
1 cm jahe
2 sendok teh ketumbar bubuk
1 sendok teh asam Jawa
1 sendok makan gula Jawa
2 sendok teh garam
1 batang serai 

Tata Cara membuat Ayam Goreng Bumbu Kuning
  1. - Pertama ambil panci lalu taruh ayam, beri bumbu yang sudah dihaluskan, daun salam, lalu tuangi air dan aduk aduk sampai rata.
  2. - Kemudian masak sampai ayam matang dan terlihat airnya menyusut, kemudian Angkat, tiriskan.
  3. - Terakhir goreng dalam minyak panas sampai kuning kecokelatan (matang) dan kering.selesai
